How we eat, like what we eat, does not depend only on our needs, cultures and tastes. For today, a collection of legal standards, trade agreements and health recommendations are endeavoring to take charge of our food. The very status and definition of the food we consume has its roots in this intense production of standards, which are constantly expanding in the name of our well-being, traditions and the defense of our local products.
Food standards are faced with issues of cultural and social antagonisms, old religious conflicts but also of conflicts related to the definition of nature itself – as is the case with movements promoting breastfeeding which, 40 years ago, was the sign of feminine alienation.
François Dubet is the scientific director of the Fondation pour les sciences sociales, a professor emeritus of the Université de Bordeaux and the director of studies at the École des hautes études en sciences sociales (EHESS).

The Fondation pour les sciences sociales (Social sciences foundation), was created in 2011 under the aegis of the Fondation de France. Its purpose is to introduce and engage the interest of a wide audience in work of a high academic standard based on a solid empirical research approach, and to encourage well argued discussion around this research. It is interested in all the social sciences disciplines without exception.
